FOOD & DRINK IN DUBROVNIK Croatians place a high priority on fresh, correctly prepared food. The star of Dubrovnik cuisine is fish and seafood, extremely fresh and beautifully prepared. Some specialties include sea bass, grouper, scorpion fish, pilchards, mackerel, squid and sea bream. Fish is usually grilled with local olive oil, garlic and lemon. With strong links to Italy, pasta and risotto are served everywhere as well as wood-fired pizza. Try thin slices of smoked Dalmatian ham as an appetizer. Dalmatian pasticada is a meat stew (beef stuffed with lard and roasted in wine and spices) often served with gnocchi. Dalmatian deserts are fairly simple, and include dried figs and raisins, almonds, honey and eggs as common ingredients.
